PICKLED RED ONIONS
MAKES ½ CUP / PREPARATION 5 MINUTES PLUS PICKLING TIME
1 small red onion, finely sliced
½ recipe Basic Pickling Brine (see recipe)
Place the onion in a bowl. In a small pot over a high heat, bring the Basic Pickling Brine to the boil. Pour the brine over the onions and allow to sit for at least 30 minutes to pickle. Drain well. Store in the fridge for up to 2 weeks.
