Kelli, this was such a lovely thing to do together. My husband was tired from a big day at work so rolling that gnocchi on a basket with a glass of red wine did the trick. Busy hands – quiet mind. I’ve always looked at those big puffballs and been too afraid to try. Thank you for that interesting and informative article on mushroom foraging and the cool recipes to go with it. I think I’ve almost summoned the courage to head out and give it a try and having the article as a reference is giving me more confidence. That pasta! I’ve always wanted to make my own, but never bothered because store-bought is too easy. But that beetroot pasta has been calling to me over and over again. It finally pushed me off the sofa and out of my comfort zone and became a project last weekend. FANTASTICO! Not as beautiful as yours, but so much fun. Now to perfect my fillings for those amazing ravioli.
